Stuffed Tomatoes

Ingredients:

  • 6 medium-sized tomatoes
  • 1/3 cup cooked rice
  • 1/3 cup grated cheese
  • 1/3 cup chopped onion
  • 1/3 cup chopped green pepper
  • 1/3 cup chopped celery
  • 2 tbsp chopped parsley
  • 1/4 tsp salt
  • Pepper to taste

Instructions:

  1. Cut off the tops of the tomatoes and scoop out the pulp.
  2. Mix the cooked rice, grated cheese, chopped onion, chopped green pepper, chopped celery, chopped parsley, salt, and pepper together.
  3. Stuff the tomato shells with the mixture.
  4. Bake the stuffed tomatoes at 350°F for 20-25 minutes.
