Ingredients:
- 1 1/2 pounds ground beef
- 1 onion, chopped
- 2 cups frozen mixed vegetables
- 2 cans diced tomatoes
- 1 1/2 cups V8 vegetable juice
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup uncooked white rice
Instructions:
- In a large skillet over medium heat, brown the ground beef and onion until the meat is no longer pink.
- Add the mixed vegetables, diced tomatoes, vegetable juice, Worcestershire sauce, thyme, basil, salt, and pepper to the skillet. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for 10-15 minutes.
- Stir in the uncooked rice and cook for an additional 20-25 minutes or until the rice is fully cooked and the mixture is thick and creamy, stirring occasionally.

- 2 beaten egg yolks
- 2 cups half & half
- 1/4 cup flour
- 2 cans evaporated milk
- 1 pinch nutmeg
- 1 cup grated cheddar cheese
- 1 tsp garlic powder
- 2 cups cooked and shredded potatoes
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup cooked and crumbled bacon
- 1/2 cup chopped green onion
Instructions:
- In a saucepan, melt butter and stir in flour, salt, pepper, garlic and nutmeg.
- Add half & half and evaporated milk and cook on medium-high heat until thickened.
- Mix in cheese and stir until melted. Remove from heat.
- Add potatoes and bacon to the cheese sauce and stir to combine.
- In a separate bowl, beat egg yolks. Slowly add one cup of the hot cheese sauce to the bowl, whisking constantly.
- Add egg yolk and cheese mixture back into the saucepan and stir until heated through.
- Serve hot, topped with green onions. Enjoy!
