Instructions:

- Bring to a boil, then reduce heat and let simmer until potatoes are tender.
- In a separate bowl, whisk together the flour and milk.
- Add this mixture to the pot and bring everything to a boil again.

Ingredients:
- 1 lb. boneless, skinless chicken breasts
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 yellow onion, sliced
- 2 tablespoons olive oil
- 1 tablespoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded Parmesan cheese
Instructions:
- Preheat oven to 400°F.
- Place chicken breasts in the center of a large baking dish.
- Arrange broccoli florets, red bell pepper, and onion slices around the chicken.
- Drizzle everything with olive oil and sprinkle with Italian seasoning, salt, and pepper.
- Bake for 25-30 minutes or until the chicken is cooked through.
- Sprinkle everything with Parmesan cheese and serve.

- 1 lb. ground beef
- 1 tablespoon chili powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (10 oz.) can diced tomatoes and green chilies, drained
- 1 bag tortilla chips
- 2 cups shredded cheddar cheese
- Optional toppings: diced avocado, sliced jalapeños, diced red onion, chopped cilantro, sour cream
Instructions:
- Preheat oven to 400°F.
- In a large skillet, brown the ground beef over medium heat.
- Stir in the chili powder, cumin, paprika, garlic powder, salt, and pepper.
- Stir in the diced tomatoes and green chilies.
- Place tortilla chips on a large baking sheet.
- Spoon the beef mixture over the chips.

- 2 cloves garlic, minced
- 1 (8 oz.) can tomato sauce
- 1 (10 oz.) can diced tomatoes and green chilies, drained
- 1 (14.5 oz.) can diced tomatoes, undrained
- 1 (1 oz.) package taco seasoning
- 2 cups water
- 8 oz. penne pasta
- 1/2 cup shredded cheddar cheese
- Optional toppings: chopped cilantro, sour cream, sliced jalapeños, diced avocado
Instructions:
- In a large skillet, brown the ground beef over medium heat.
- Add the onion and garlic to the skillet and cook until onion is tender.
- Stir in the tomato sauce, diced tomatoes and green chilies, diced tomatoes, taco seasoning, and water.
- Add the pasta and bring everything to a boil.
- Reduce heat and let simmer, uncovered, for 15-20 minutes or until pasta is tender and sauce has thickened.
- Sprinkle with shredded cheddar cheese and let cheese melt.
- Serve with optional toppings, if desired.
