A Simple, Delicious Grilled Keto Halloumi Salad
Start by grilling some halloumi cheese slices until they are golden brown and crispy on the outside. While the cheese is cooking, prepare a bed of fresh greens and herbs, and add some sliced fresh raspberries for sweetness and color. Ingredients:
- 250g Halloumi Cheese
- 2 cups mixed greens and herbs
- 1/2 cup fresh raspberries
Instructions:
- Preheat your grill to medium-high heat
- Cut the halloumi cheese into slices
- Place the cheese slices on the grill and cook until golden brown and crispy on both sides
- While the cheese is cooking, prepare a bed of fresh greens and herbs on a plate
- Add the fresh raspberries to the salad
- Once the cheese is done, remove it from the grill and place it on top of the salad

Faux-tato Salad Keto Friendly
This salad is made with cauliflower instead of potatoes, so it is low-carb and keto-friendly. It has all the flavors of traditional potato salad, without the added carbs. It's perfect for a picnic, a BBQ, or just a quick and easy lunch.
Ingredients:
- 1 head of cauliflower, chopped into small pieces
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 2 tablespoons white wine vinegar
- 2 tablespoons chopped fresh dill
- 2 tablespoons chopped fresh parsley
- 3 celery stalks, chopped
- 1/4 cup chopped red onion
- 4 hard-boiled eggs, chopped
Instructions:
- Add the chopped cauliflower to a pot of boiling water and cook until tender, about 10 minutes
- Drain the cauliflower and set aside to cool
- In a large bowl, whisk together the mayonnaise, Dijon mustard, white wine vinegar, dill, and parsley
- Add the cooked and cooled cauliflower, celery, red onion, and chopped eggs to the bowl with the dressing and mix well
