Quick and Easy Mexican Shrimp Skillet
Ingredients:
- 1 pound of shrimp
- 1 tablespoon of olive oil
- 1/4 onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1/4 teaspoon cumin
- 1/4 teaspoon dried oregano
- 1/2 lime
- 14 oz diced fire-roasted tomatoes
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Cilantro, for garnish (optional)
Directions:
- Begin by heating the olive oil in a large skillet over medium heat. Add the onions and garlic; sauté for 1-2 minutes until translucent.
- Next, add the shrimp, smoked paprika, chili powder, cumin, and oregano. Stir to combine and cook for 2-3 minutes, stirring occasionally.
- Squeeze the lime juice over the shrimp, then add the diced fire-roasted tomatoes, salt, and pepper. Give everything a good stir and let it simmer for 5-6 minutes.
- Taste the dish and adjust the seasoning to your liking. Garnish with fresh cilantro, and you're ready to serve.
Classic Beef Tacos
Ingredients:
- 1 pound of ground beef
- 1 tablespoon of olive oil
- 1/2 onion, chopped
- 1 tablespoon of chili powder
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of ground cumin
- 1/2 teaspoon of smoked paprika
- Salt and pepper to taste
- 12 hard taco shells
- Shredded Cheddar cheese
- 1 small tomato, diced
- Iceberg lettuce, shredded
- Sour cream (optional)
Directions:
- Start by adding the olive oil to a large skillet over medium-high heat. Add onions and sauté for 2-3 minutes until they become translucent.
- Add ground beef and continue cooking until it becomes brown while stirring occasionally. Drain the excess fat and return it to the pan.

Homemade Guacamole
Ingredients:
- 3 ripe avocados
- 1 lime, juiced
- 1 jalapeno, seeded and minced
- 1/4 cup minced red onion
- 1/4 cup chopped fresh cilantro
- 1/2 teaspoon of salt
- Pepper to taste
Directions:
- Begin by cutting avocados in half, remove the pit, and scoop out the flesh of the avocado into a mixing bowl.
- Next, add the lime juice, jalapeño, red onion, cilantro, salt, and pepper. Mash all the ingredients together with a fork or a potato masher until well combined.
- Taste the guacamole and adjust the seasoning to your liking.
- Cover and refrigerate for at least 30 minutes before serving. This allows the flavors to meld together and develop, which is always much better
