Oven Baked Pork Chops with Potatoes
Start by preheating your oven to 350°F. Then, gather the following ingredients:
Ingredients:
- 4 pork chops (bone-in or boneless)
- 3-4 potatoes, peeled and sliced
- 1 onion, sliced
- 1 can sauerkraut
- 1/4 cup brown sugar
- 1/4 cup apple cider vinegar
- 1/4 cup water
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 teaspoon paprika
- Salt and pepper, to taste
In a large bowl, mix together the brown sugar, apple cider vinegar, water, olive oil, minced garlic, paprika, salt, and pepper. Add the pork chops to the bowl and coat them with the marinade.
Next, in a large baking dish, add the sliced potatoes and onions. Pour the sauerkraut (juices and all) on top of the potatoes and onions. Place the marinated pork chops on top of the sauerkraut and drizzle any remaining marinade on top.
Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 40-45 minutes, or until the pork chops are cooked through and the potatoes are fork-tender. Remove the aluminum foil and let it bake for another 10-15 minutes to give everything a nice golden brown color.
Slow Cooker Pork Chops and Sauerkraut
If you don't have time to use the oven or simply want to set it and forget it, try out this slow cooker version of the dish. Start by gathering the same ingredients:
Ingredients:
- 4 pork chops (bone-in or boneless)
- 3-4 potatoes, peeled and sliced
- 1 onion, sliced
- 1 can sauerkraut
- 1/4 cup brown sugar
- 1/4 cup apple cider vinegar
- 1/4 cup water
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 teaspoon paprika
- Salt and pepper, to taste
In a large bowl, mix together the brown sugar, apple cider vinegar, water, olive oil, minced garlic, paprika, salt, and pepper. Add the pork chops to the bowl and coat them with the marinade.
Next, in a slow cooker, add the sliced potatoes and onions. Pour the sauerkraut (juices and all) on top of the potatoes and onions. Place the marinated pork chops on top of the sauerkraut and drizzle any remaining marinade on top.
Cover the slow cooker and cook on low for 6-8 hours, or on high for 3-4 hours, or until the pork chops are cooked through and the potatoes are fork-tender.
Feel free to tweak the recipe to your liking. You could add some caraway seeds to give it a little more flavor, or switch out the pork chops for chicken if you prefer. Regardless, you won't be disappointed with this delicious one-pan dinner recipe!
Enjoy!
