4 medium-sized sweet potatoes

1 tsp. garlic powder
1 tsp. dried thyme
1 tsp. dried basil
1/2 tsp. salt
1 tbsp. olive oil
Instructions: 1. Preheat oven to 400 degrees F. 2. Bake sweet potatoes in the oven for about 40 minutes, or until soft. 3. Meanwhile, heat olive oil in a large skillet over medium-high heat. 4. Add the onions and cook until translucent. 5. Add the Italian sausage to the skillet and cook until browned. 6. Stir in the garlic powder, thyme, basil, and salt. 7. Cut open the sweet potatoes and scoop out the flesh, leaving about 1/4 inch of flesh inside the skin. 8. Spoon the sausage mixture into the sweet potato skins. 9.
