Chicken & Corn Saute

Ingredients:

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 can of corn, drained and rinsed
  • 1 red bell pepper, cut into bite-sized pieces
  • 1 green bell pepper, cut into bite-sized pieces
  • 1 onion, sliced
  • 4 cloves of garlic, minced

  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions:

  1. Season the chicken with salt and pepper.
  2. Heat 1 tbsp of vegetable oil in a large skillet over medium-high heat. When hot, add the chicken and cook for 5-7 minutes, or until browned on all sides. Remove the chicken from the skillet and set aside.
  3. In the same skillet, heat another tbsp of oil over medium-high heat. When hot, add the onion and cook for 2-3 minutes, or until it starts to soften.
  4. Add the garlic and cook for 30 seconds, or until fragrant.
  5. Add the red and green bell peppers and cook for 3-4 minutes, or until they start to soften.
  6. Return the chicken to the skillet and add the corn.
  7. In a small bowl, whisk together the soy sauce, cornstarch, and chicken broth. Pour the mixture into the skillet and stir to coat the ingredients.
  8. Cook for 2-3 minutes, or until the sauce has thickened and the chicken is cooked through.
  9. Serve hot with rice.
