The Grilled Cheese Truck's Cheesy Bacon Melt
Ingredients:
- 4 slices of sourdough bread
- 8 slices of cooked bacon
- 1/2 cup caramelized onions
- 1/4 cup cheddar cheese, shredded
- 1/4 cup monterey jack cheese, shredded
- 1/4 cup gruyere cheese, shredded
- Butter
Instructions:
- Butter one side of each slice of bread.
- Heat a non-stick pan over medium heat.
- Place a slice of bread, butter side down, in the pan.
- Add half of each cheese on top of the bread in the pan.
- Add the bacon and caramelized onions on top of the cheese.
- Add the remaining cheese on top of the bacon and onions.
- Place the second slice of bread on top, butter side up.
- Cook until the bottom slice is golden brown and the cheese is melted, about 3-4 minutes.
- Flip the sandwich over and cook until the other side is golden brown and the cheese is melted, about 2-3 minutes.
- Remove from the pan and let cool for a minute or two before serving.
Mr. Sugar Rush's Deep Fried S'mores Sandwich
Ingredients:
- 4 slices of white bread
- 2 tablespoons of Nutella
- 2 tablespoons of marshmallow fluff
- 4 graham crackers, crushed
- 1 egg, beaten
- 1/2 cup milk
- 1 cup flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 cup powdered sugar
- Vegetable oil, for frying
Instructions:
- Preheat a deep fryer or a pot of oil to 350°F.
- Spread Nutella on two slices of bread and marshmallow fluff on the other two slices of bread.
- Sprinkle crushed graham crackers on all four slices of bread.
- Place the Nutella slices of bread on top of the marshmallow fluff slices of bread to create two sandwiches.
- In a shallow dish, mix together the egg and milk.
- In a separate bowl, mix together the flour, baking powder, salt, and powdered sugar.
- Dip each sandwich in the egg mixture, then in the flour mixture, making sure to coat all sides.
- Carefully place the sandwich in the hot oil and fry until golden brown, about 2-3 minutes per side.
- Remove from the oil and let cool for a minute or two before serving.
The Grilled Cheese Truck's Kimchi Quesadilla
Ingredients:
- 2 tortillas
- 1/2 cup kimchi, chopped
- 1/4 cup mozzarella cheese, shredded
- 1/4 cup cheddar cheese, shredded
- 1/4 cup monterey jack cheese, shredded
- 1 tablespoon butter
Instructions:
- Heat a non-stick pan over medium heat.
- Place one tortilla in the pan.
- Add half of each cheese on top of the tortilla in the pan.
- Add the kimchi on top of the cheese.
- Add the remaining cheese on top of the kimchi.
- Place the second tortilla on top.
- Cook until the bottom tortilla is golden brown and the cheese is melted, about 3-4 minutes.
- Flip the quesadilla over and cook until the other side is golden brown and the cheese is melted, about 2-3 minutes.
- Remove from the pan and let cool for a minute or two before serving.
The Lobos Truck's Chorizo Breakfast Burrito
Ingredients:
- 1/2 pound chorizo sausage, casings removed
- 8 eggs, beaten
- 1/4 cup milk
- 1/2 cup cheddar cheese, shredded
- 4 large flour tortillas
- 1 cup green chili sauce
- Salt and pepper
- Butter
Instructions:
- Heat a non-stick pan over medium heat.
- Add the chorizo and cook, breaking it up with a spoon, for 8-10 minutes, or until cooked through. Remove from the pan and set aside.
- In a separate bowl, whisk together the eggs and milk. Season with salt and pepper.
- Heat the same non-stick pan over medium heat. Add butter and let it melt.
- Add the egg mixture to the pan and scramble until they're cooked through but still fluffy. Remove from the pan and set aside.
- Warm up the tortillas in the microwave or on a griddle until they're soft and pliable.
- Divide the chorizo and scrambled eggs evenly among the tortillas.
- Sprinkle shredded cheese on top of the chorizo and eggs.
- Roll up the tortillas, tucking in the sides as you go.
- Place the burritos in a baking dish and spoon the green chili sauce over the top.
- Bake in a preheated 350°F oven until heated through, about 10-12 minutes.
- Remove from the oven and let cool for a minute or two before serving.
