Bunny Chow Recipe
Ingredients:
- 1 kg chicken breast, cut into chunks
- 2 large onions, finely chopped
- 4-6 garlic cloves, finely chopped
- 2 large tomatoes, chopped
- 1 tsp turmeric powder
- 2 tsp cumin powder
- 2 tsp coriander powder
- 2 tsp garam masala powder
- 2 tsp chili powder
- 1 tsp grated ginger
- 2 tsp salt
- 2 tbsp oil
- 4-6 bread rolls
Method:
- In a large pot, heat the oil and sauté the onions until they are soft and translucent.
- Add the garlic and ginger and sauté for another minute.
- Add the tomatoes and cook until they are soft and mushy.
- Add all the spices and cook for another minute.
- Add the chicken and mix well with the spice mixture.
- Reduce the heat to low and let the curry simmer for 30-40 minutes or until the meat is cooked through.
- Hollow out the bread rolls and fill them with the curry.
- Enjoy your Traditional South African Bunny Chow with some of your favorite condiments.
Bobotie Recipe
Ingredients:
- 2 tbsp oil
- 2 onions, chopped finely
- 2 tsp garlic, chopped
- 1 kg beef mince
- 2 slices of bread, soaked in water
- 4 tsp curry powder
- 3 tbsp chutney
- 1 tbsp apricot jam
- 1 tbsp white vinegar
- 2 bay leaves
- 1 tbsp sugar
- 1 tsp salt
- 4 eggs
- 1/2 cup milk
Method:
- Preheat the oven to 160°C.
- In a large pan, heat the oil and sauté the onions and garlic until they are soft and translucent.
- Add the beef mince and cook until browned.
- Add the curry powder, chutney, apricot jam, white vinegar, bay leaves, sugar, and salt. Mix well and cook for another 5 minutes.
- Transfer the mixture to a baking dish.
- In a separate bowl, beat the eggs and milk together.
- Pour the egg mixture over the beef mince mixture and bake for 30 minutes until the egg topping is golden and set.
- Serve your South African Bobotie with some yellow rice and chutney.
