Ingredients:
- 2 tablespoons olive oil
- 1 large onion, thinly sliced
- 3 cloves garlic, minced
- 1 large red pepper, sliced
- 1 large green pepper, sliced
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and black pepper to taste
- 1/2 cup white wine
- 1 can (28 oz) whole peeled tomatoes, undrained
- 1/2 cup kalamata olives, pitted
- 1 tablespoon capers
- 4-6 white fish fillets (such as hake or cod)
- 2 tablespoons chopped fresh parsley
Instructions:
- Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the red and green peppers and continue cooking until the peppers are tender, about 10 minutes.
- Add the oregano, paprika, salt, and black pepper and stir to combine.
- Pour in the white wine and let it simmer until slightly reduced, about 5 minutes.
- Pour in the canned tomatoes and their juices, crushing the tomatoes with your hands or a wooden spoon to break them up.
- Add the olives and capers and bring the mixture to a simmer. Cook for about 10 minutes to let the flavors meld together.
- Nestle the fish fillets into the tomato sauce and spoon some of the sauce over the top of the fish. Cover the skillet and let the fish cook for about 10 minutes, or until cooked through and flaky.
- Sprinkle with parsley and serve!

- 1 can (8 oz) tomato sauce

- 8-10 lasagna noodles, broken into pieces
- 1 cup shredded mozzarella cheese
- 1/2 cup ricotta cheese

- Stir in the shredded mozzarella cheese, ricotta cheese, and grated Parmesan cheese. Cook until the cheese is melted and the mixture is heated through, about 5 minutes.
