Keto Greek Salad
Ingredients:
- 1 head romaine lettuce
- 1 small cucumber
- 1 small red onion
- 1 small green bell pepper
- 1 small red bell pepper
- 1 large tomato
- 6 oz feta cheese
- 1/2 cup Kalamata olives
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 clove garlic, minced
- 1 tsp dried oregano
- Salt and pepper, to taste
Instructions:
- Wash and chop all vegetables and place in a large bowl.
- Crumble feta cheese and add to bowl with Kalamata olives.
- In a small bowl, whisk together olive oil, lemon juice, garlic, and oregano.
- Pour dressing over the salad and toss to combine.
- Season with salt and pepper to taste.
- Serve chilled and enjoy!
Buffalo Chopped Chicken Salad
Ingredients:
- 1 lb chicken breast, cooked and cubed
- 6 cups mixed greens
- 1 medium tomato, diced
- 1 medium carrot, peeled and shredded
- 1/3 cup blue cheese crumbles
- 1/4 cup chopped celery
- 2 Tbsp chopped scallions
- 1/4 cup mayonnaise
- 2 Tbsp hot sauce
- 1 Tbsp white vinegar
- 1/2 tsp garlic powder
- 1/4 tsp paprika
- 1/4 tsp dried parsley
- Salt and pepper, to taste
Instructions:
- In a small bowl, whisk together mayonnaise, hot sauce, white vinegar, and spices to make the dressing.
- In a large bowl, combine chicken, mixed greens, tomato, carrot, blue cheese, celery, and scallions.
- Pour dressing over salad and toss to combine.
- Season with salt and pepper to taste.
- Serve immediately and enjoy!
