Recipe 1: Toddler Pancakes
Ingredients:
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1 tablespoon white sugar
- 1/4 teaspoon salt
- 1 cup milk
- 1 egg
- 2 tablespoons unsalted butter, melted
Instructions:
- In a large bowl, whisk together the flour, baking powder, sugar, and salt.
- In a separate bowl, beat together the milk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Don't overmix.
- Heat a griddle or non-stick pan over medium heat. Use a 1/4 cup measure to scoop batter onto the hot griddle.
- Cook until the tops of the pancakes are covered with bubbles and the edges begin to dry and look set. Flip the pancakes and cook until the other side is golden brown. Serve immediately.
Recipe 2: Banana Oatmeal
Ingredients:
- 1 cup rolled oats
- 2 cups milk
- 1 banana, mashed
- 1 tablespoon maple syrup or honey
- 1/4 teaspoon ground cinnamon
Instructions:
- In a medium saucepan, combine the rolled oats and milk.
- Bring the mixture to a boil over medium heat, then reduce the heat to low and add the mashed banana, maple syrup or honey, and cinnamon. Stir well to combine.
- Cook, stirring occasionally, until the oatmeal is thick and creamy, about 5-7 minutes.
- Remove from heat and let cool slightly before serving. You can add extra milk or water to thin out the oatmeal if needed.
