Recipe 1: Quick Midweek Meal
Looking for a quick midweek meal that's both tasty and easy to make? Check out this recipe from delicious. magazine.
Ingredients:
- 1 tbsp olive oil
- 1 red onion, finely chopped
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 zucchini, diced
- 1 tsp dried oregano
- 1 x 400g can chopped tomatoes
- 1 x 400g can chickpeas, drained and rinsed
- 100g baby spinach leaves
- Salt and freshly ground black pepper
- Crusty bread, to serve
Instructions:
- Heat the oil in a large frying pan over a medium heat. Add the onion and cook for 5 minutes, stirring occasionally.
- Add the garlic and cook for another 2 minutes.
- Add the red and yellow bell peppers, zucchini, and oregano. Cook for 10 minutes or until the vegetables are tender.
- Add the chopped tomatoes and chickpeas. Bring to a simmer and cook for 5 minutes.
- Stir in the spinach until wilted. Season with salt and pepper.
- Serve hot with crusty bread.
Recipe 2: Weekend Meal

Ingredients:
- 1kg piece of pork belly, bones removed and skin scored
- 1 tsp Chinese five-spice powder
- 1 tbsp sunflower oil
- 4 garlic cloves, roughly chopped
- 4 cm piece ginger, peeled and roughly chopped
- 1 red chilli, seeded and chopped
- 2 tbsp soy sauce
- 2 tbsp honey
- 600ml chicken stock
- 2 star anise
- 2 cinnamon sticks
- 400g baby new potatoes, halved
- Salt and freshly ground black pepper
Instructions:
- Preheat oven to 220C/200C fan/gas 7.
- Put the pork belly on a foil-lined baking tray. Rub the five-spice powder and salt all over the pork and gently rub into the skin.
- Roast for 30 minutes, then reduce oven to 180C/160C fan/gas 4 and roast for another 20 minutes.
- Take the pork out of the oven and transfer to a large roasting tin.
- Heat the sunflower oil in a large frying pan. Add the garlic, ginger, and chilli. Cook for 2 minutes, then pour in the soy sauce and honey. Stir and bring to a simmer.
- Add the chicken stock, star anise, and cinnamon sticks. Bring to a simmer, then pour the mixture over the pork.
- Add the potatoes around the pork and season with salt and pepper. Cover with foil.
- Cook for 2 hours, or until the pork is tender and falling apart.
- Remove the foil and turn the heat up to 220C/200C fan/gas 7. Baste the pork and potatoes with the cooking juices and roast for another 20-30 minutes, or until the skin is crispy.
- Serve hot with your favorite sides.
