Spicy Vegetable Pulao
Ingredients:
- 1 cup uncooked basmati rice
- 2 tbsp ghee
- 2 cups mixed vegetables (peas, carrots, beans, corn)
- 1 tsp cumin seeds
- 2-3 cloves
- 2-3 green cardamom pods
- 1 cinnamon stick
- 1 bay leaf
- 1 onion, thinly sliced
- 1 tsp ginger garlic paste
- 2 green chillies, slit lengthwise
- 1 tsp red chilli powder
- 1 tsp garam masala
- 1 tsp salt
- 2 cups water
Instructions:
- Wash the rice and soak it in water for 15-20 minutes.
- In a large pot, heat the ghee and add the cumin seeds, cloves, cardamom pods, cinnamon stick, and bay leaf. Fry for a minute or two until fragrant.
- Add the sliced onions and fry until golden brown.
- Stir in the ginger garlic paste and green chillies and fry for a minute more.
- Add the mixed vegetables, red chilli powder, garam masala, and salt. Fry for a few minutes until the vegetables are tender.
- Drain the soaked rice and add it to the pot. Stir gently to coat the rice in the masala.
- Pour in 2 cups of water and bring the mixture to a boil.
- Cover the pot and reduce the heat to low. Simmer for 15-20 minutes until the rice is cooked through and the water has been absorbed.
- Fluff the rice with a fork and serve hot.
Palak Paneer
Ingredients:
- 1 lb paneer, cut into cubes
- 1 bunch spinach, chopped
- 2 tbsp ghee
- 1 onion, chopped
- 1 tsp ginger garlic paste
- 2 green chillies, slit lengthwise
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1 tsp turmeric powder
- 1 tsp red chilli powder
- 1 tsp garam masala
- 1 tsp salt
- 1/2 cup water
Instructions:
- In a large pot, blanch the spinach until wilted. Drain and blend until smooth.
- In a separate pan, fry the paneer cubes until golden brown. Set aside.
- Heat the ghee in a pot and add the chopped onions. Fry until golden brown.
- Add the ginger garlic paste and green chillies and fry for a minute more.
- Stir in the cumin seeds, coriander powder, turmeric powder, red chilli powder, garam masala, and salt. Fry for a few minutes until fragrant.
- Pour in the blended spinach and 1/2 cup of water. Simmer for 10-15 minutes until the gravy has thickened and the flavors have melded.
- Add the fried paneer cubes to the pot and stir gently to coat them in the gravy.
- Cover the pot and let the paneer simmer in the gravy for 5-10 more minutes until heated through.
- Serve hot with rice or naan.
