Mexican Lasagna
Ingredients:
- 1 lb. ground beef
- 1 packet taco seasoning
- 1 jar of salsa
- 1 cup water
- 6-8 flour tortillas
- 1 can refried beans
- 2 cups shredded cheese
Instructions:
- Preheat oven to 375 degrees F.
- In a large skillet, cook ground beef over medium-high heat until browned and fully cooked. Drain excess fat.
- Add taco seasoning, salsa, and water to the skillet with the beef. Stir to combine.
- Place a layer of tortillas on the bottom of a greased 9x13 inch baking dish.
- Spread half the refried beans over the tortillas.
- Add half the beef mixture on top of the beans.
- Sprinkle one cup of cheese over the beef mixture.
- Add another layer of tortillas on top of the cheese.
- Repeat layers with remaining beans, beef mixture, and cheese.
- Bake for 25-30 minutes or until cheese is melted and bubbly.
Seafood Linguine
Ingredients:
- 1 lb. linguine pasta
- 1 lb. shrimp, peeled and deveined
- 1 lb. calamari, cleaned and chopped into rings
- 1/2 cup butter
- 4 cloves of garlic, minced
- 1 cup white wine
- 1/4 cup chopped parsley
- Salt and pepper to taste
Instructions:
- Cook linguine according to package directions.
- In a large skillet, melt butter over medium-high heat.
- Add garlic to the skillet and cook for 2 minutes or until fragrant.
- Add shrimp and calamari to the skillet. Cook until seafood is fully cooked and pink.
- Remove the seafood from the skillet and set aside.
- Add white wine to the skillet and reduce the heat to medium-low. Cook until the wine has reduced by half.
- Add cooked linguine to the skillet and toss to coat in the wine sauce.
- Add the shrimp and calamari back into the skillet and toss with the pasta.
- Garnish with chopped parsley and season with salt and pepper to taste.
