  2. Add the mixed vegetables, diced tomatoes, vegetable juice, Worcestershire sauce, thyme, basil, salt, and pepper to the skillet. Stir well to combine.
  3. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 10-15 minutes.
  4. Stir in the uncooked rice and cook for an additional 20-25 minutes or until the rice is fully cooked and the mixture is thick and creamy, stirring occasionally.

  • 1 pinch nutmeg

  • 2 cups cooked and shredded potatoes
  • 1 tsp salt
  • 1/2 tsp black pepper
