Ginger Chicken

Ingredients:

  • 1 pound chicken breast, cut into small pieces
  • 2 tablespoons vegetable oil
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • Salt, to taste

Instructions:

  1. Heat oil in a pan and add the chicken. Cook for a few minutes until browned on both sides. Remove the chicken from the pan and set aside.
  2. Add ginger and garlic paste to the pan and cook for a minute until fragrant. Add cumin, coriander, red chili, turmeric and garam masala powders. Stir well and cook for a minute.
  3. Add chicken back into the pan. Stir well and add soy sauce and honey. Cook for a few minutes, tossing the chicken to coat it well with the sauce.
  4. Add salt to taste.

Ingredients:

  • 1 cup whole black lentils
  • 1/4 cup kidney beans
  • 3 cups water
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 1 green chili, chopped
  • 2 tablespoons butter
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1/2 cup cream
  • Salt, to taste

Instructions:

  1. Wash lentils and kidney beans in running water. Soak them overnight in enough water.
  2. Drain the water and pressure cook the lentils and beans in 3 cups of fresh water. Cook until soft and mushy.
  3. In a pan, heat butter and saute onions until golden brown. Add ginger paste, garlic paste and green chili. Fry for a minute until fragrant.
  4. Add chopped tomatoes and spices- cumin powder, coriander powder, red chili powder and turmeric powder. Cook for a few minutes until the tomatoes are soft and mushy.
  5. Add cooked lentils and beans to the pan. Mix well and cook for 10 minutes. Mash them slightly with the back of a spoon.
  6. Add cream and salt. Mix well and simmer on low heat for 10-15 min.
  7. Garnish with chopped cilantro and serve hot with naan or rice.
