Y'all ready for some delicious dinner recipes? Here are a couple of my favorites:
Bacon Spinach Stuffed Chicken
Ingredients:
- 4 boneless, skinless chicken breasts
- 4 slices bacon
- 2 cups chopped spinach
- 4 ounces cream cheese, softened
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions:
- Preheat oven to 375°F.
- Cook bacon in a pan until crispy. Remove and place on a paper towel to cool. Once cooled, chop into pieces.
- In a medium bowl, mix together spinach, cream cheese, garlic, salt, and pepper. Stir in chopped bacon.
- Lay chicken breasts on a cutting board. Slice into the thickest part of each breast to create a pocket, being careful not to cut through to the other side.
- Spoon the cream cheese mixture into each pocket, using toothpicks to keep them closed.
- Heat olive oil in a large oven-safe skillet over medium heat. Place chicken in the skillet and cook until browned, about 2-3 minutes per side.
- Transfer skillet to the oven and bake for 20-25 minutes, or until chicken is cooked through.
- Remove from oven and let rest for 10 minutes before serving.
Easy Chicken Dinner
Ingredients:
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon black pepper
Instructions:
- In a small bowl, whisk together olive oil, soy sauce, honey, garlic, basil, oregano, and black pepper.
- Place chicken in a large Ziploc bag and pour marinade over it. Seal the bag and refrigerate for at least 30 minutes, up to 8 hours.
- Preheat oven to 375°F.
- Remove chicken from the bag and discard marinade.
- Place chicken in a baking dish and bake for 30-35 minutes, or until chicken is cooked through.
- Remove from oven and let rest for 5 minutes before serving.
