Ingredients:

  • 1 lb. ground beef
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 cup corn kernels
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. In a large pot, cook ground beef over medium heat until browned and cooked through.
  2. Add onion, green bell pepper, and garlic. Cook until vegetables are softened, about 5 minutes.
  3. Add corn, black beans, diced tomatoes, tomato sauce, chili powder, cumin, salt, and black pepper. Stir to combine.
  4. Simmer for 10-15 minutes, or until vegetables are cooked through and chili is heated through.
  5. Serve hot.

Ingredients:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 cup whole milk
  • 1 teaspoon pure vanilla extract
  • 1 cup fresh strawberries, diced

Instructions:

  1. Preheat oven to 350°F. Grease a 9-inch cake pan with cooking spray. Dust with flour to coat.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a separate large bowl, cream together butter and sugar until light and fluffy.
  4. Add egg and whisk until well combined.
  5. Gradually stir in dry ingredients, alternating with milk. Add vanilla extract and stir until batter is smooth.
  6. Gently fold in strawberries.
  7. Pour batter into prepared cake pan and smooth out the top.
  8. Bake for 35-40 minutes, or until cake is golden brown and a toothpick inserted into the center comes out clean.
  9. Let cake cool in pan for 10 minutes, then turn out onto a wire rack to cool completely.
  10. Serve and enjoy!
