What's good, fam? Today, I'm sharing with you some bomb lunch ideas for all my busy mamas out there. These dishes are quick, easy, and most importantly, delicious. Check it out:

Ingredients:

  • 2 cups of cooked rice
  • 2 cups of chopped veggies (broccoli, carrots, bell peppers, etc.)
  • 1 cup of protein (chicken, shrimp, tofu, etc.)
  • 1/4 cup of soy sauce
  • 1 tbsp of honey
  • 1 tbsp of sriracha
  • 1 tbsp of garlic powder
  • 1 tbsp of olive oil

Instructions:

  1. Heat up the olive oil in a pan over medium-high heat.
  2. Add in the protein and cook until golden brown.
  3. Add in the veggies and stir-fry until tender.
  4. Pour in the soy sauce, honey, sriracha, and garlic powder. Stir well.
  5. Serve hot over a bed of rice.

2. Korean Chicken Bowls

Korean Chicken Bowls

Ingredients:

  • 1 lb of chicken breast, sliced
  • 2 cups of cooked white rice
  • 2 cups of chopped veggies (carrots, cucumber, green onions, etc.)
  • 1/4 cup of soy sauce
  • 1/4 cup of sugar
  • 1 tbsp of sesame oil
  • 1 tbsp of rice vinegar
  • 1 tbsp of minced garlic
  • 1 tsp of grated ginger
  • 2 tbsp of gochujang paste

Instructions:

  1. Cook the rice according to package instructions.
  2. Heat up some oil in a pan over medium-high heat.
  3. Add in the chicken and cook until golden brown.
  4. Add in the veggies and stir-fry until tender.
  5. In a separate bowl, whisk together the soy sauce, sugar, sesame oil, rice vinegar, minced garlic, grated ginger, and gochujang paste.
  6. Pour the sauce over the chicken and veggies. Stir well.
  7. Simmer for a few minutes until the sauce thickens.
  8. Serve hot over a bed of rice.
