Spicy Indian Curry

Ingredients:

  • 2 tbsp. vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp. grated ginger
  • 2 tsp. ground cumin
  • 2 tsp. ground coriander
  • 1 tsp. ground turmeric
  • 1 tsp. garam masala
  • 1/2 tsp. cayenne pepper
  • 1 can chickpeas, drained and rinsed
  • 1 can diced tomatoes
  • 1 can coconut milk
  • 1 bunch kale, chopped
  • Salt and pepper, to taste

Directions:

  1. Heat oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and ginger and cook for another minute.
  3. Add cumin, coriander, turmeric, garam masala, and cayenne pepper and cook for another minute.
  4. Add chickpeas, tomatoes, and coconut milk, and bring to a simmer. Cook for 10 minutes.
  5. Add kale and continue to simmer until wilted and tender, about 5 minutes.
  6. Season with salt and pepper to taste. Serve with rice or naan.

Directions:

  1. Heat ghee in a frying pan over medium heat. Fry bread slices until golden brown and crispy.
  2. Combine sugar and water in a saucepan and bring to a boil. Reduce heat and simmer for 5 minutes.
  3. Add milk and cream to the sugar syrup and simmer for another 5 minutes.
  4. Remove from heat and stir in cardamom powder.
  5. Arrange fried bread slices in a serving dish and pour the milk mixture over them.
  6. Sprinkle sliced almonds and chopped pistachios over the top.
  7. Chill for at least an hour before serving.
