Spicy Indian Curry
Ingredients:
- 2 tbsp. vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp. grated ginger
- 2 tsp. ground cumin
- 2 tsp. ground coriander
- 1 tsp. ground turmeric
- 1 tsp. garam masala
- 1/2 tsp. cayenne pepper
- 1 can chickpeas, drained and rinsed
- 1 can diced tomatoes
- 1 can coconut milk
- 1 bunch kale, chopped
- Salt and pepper, to taste
Directions:
- Heat oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic and ginger and cook for another minute.
- Add cumin, coriander, turmeric, garam masala, and cayenne pepper and cook for another minute.
- Add chickpeas, tomatoes, and coconut milk, and bring to a simmer. Cook for 10 minutes.
- Add kale and continue to simmer until wilted and tender, about 5 minutes.
- Season with salt and pepper to taste. Serve with rice or naan.

Ingredients:
- 6 slices of bread
- 1/2 cup ghee
- 1 cup sugar

- 1 cup milk
- 1 cup heavy cream
- 1/2 tsp. cardamom powder
- 1/4 cup sliced almonds
- 1/4 cup chopped pistachios
Directions:
- Heat ghee in a frying pan over medium heat. Fry bread slices until golden brown and crispy.
- Combine sugar and water in a saucepan and bring to a boil. Reduce heat and simmer for 5 minutes.
- Add milk and cream to the sugar syrup and simmer for another 5 minutes.
- Remove from heat and stir in cardamom powder.
- Arrange fried bread slices in a serving dish and pour the milk mixture over them.
- Sprinkle sliced almonds and chopped pistachios over the top.
- Chill for at least an hour before serving.
