Air Fryer Eggplant Parmesan
Ingredients:
- 1 large eggplant, sliced into 1/4 inch rounds
- 1 cup Panko bread crumbs
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 cup marinara sauce
- 1 cup shredded mozzarella cheese
Instructions:
- Preheat air fryer to 400°F.
- In a bowl, combine Panko bread crumbs, Parmesan cheese, and Italian seasoning.
- Set up a breading station with bowls for flour, beaten eggs, and Panko mixture.
- Dip eggplant slices in the flour, then the egg, and finally the Panko mixture.
- Place breaded eggplant in a single layer in the air fryer basket.
- Cook for 8-10 minutes, flipping halfway through, until the eggplant is crispy and golden brown.
- Remove from air fryer and top each slice with a spoonful of marinara sauce and shredded mozzarella cheese.
- Place eggplant back in air fryer and cook for an additional 1-2 minutes, until the cheese is melted and bubbly.
- Serve hot and enjoy!
Lemon and Garlic Butter Baked Salmon
Ingredients:
- 4 salmon fillets, skin on
- 1 lemon, sliced
- 4 cloves garlic, minced
- 2 tbsp unsalted butter, melted
- 1 tbsp olive oil
- 1 tbsp honey
- 1/2 tsp salt
- 1/4 tsp black pepper
- Fresh parsley, chopped
Instructions:
- Preheat oven to 375°F.
- Line a baking sheet with foil and lightly grease with cooking spray or olive oil.
- Place salmon fillets, skin side down, onto the prepared baking sheet.
- In a small bowl, whisk together melted butter, minced garlic, olive oil, honey, salt, and black pepper.
- Generously brush the butter mixture onto the top of each salmon fillet.
- Arrange lemon slices over the top of the salmon in a single layer.
- Bake for 12-15 minutes, until the salmon is cooked through and flakes easily with a fork.
- Garnish with fresh parsley and serve hot with your favorite sides.
Instant Pot BBQ Ribs
Ingredients:
- 2 racks baby back ribs
- 2 cups water
- 1 cup barbecue sauce
- 1/4 cup brown sugar
- 1 tbsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
Instructions:
- Remove the thin membrane from the back of each rack of ribs.
- Season both sides of the ribs with salt, black pepper, and garlic powder.
- In a mixing bowl, whisk together barbecue sauce, brown sugar, paprika, and 1 cup of water.
- Place 1 cup of water in the Instant Pot inner pot and insert the trivet.
- Add the seasoned ribs to the Instant Pot, standing them up around the pot.
- Pour the barbecue sauce mixture over the ribs, making sure the sauce coats the ribs evenly.
- Close the Instant Pot lid and set to pressure cook on high for 25 minutes.
- Allow the pressure to naturally release for 10 minutes, then manually release any remaining pressure.
- Carefully remove the ribs from the Instant Pot and transfer to a baking sheet.
- Baste the ribs with remaining sauce and broil in the oven for 3-5 minutes until caramelized and browned.
- Serve hot and enjoy!
